Lakeside Grill: Easy Dinner Recipes and Dinner Ideas for Family Fun
Plan a dinner that can be cooked on the grill, then in the late afternoon head to the local lake for a swim and a great grill dinner by the lake. We have chosen some simple recipes. You provide the family and transportation and we’re almost there. I hope you have a lake nearby, a beach or a pond. If not, your local park should suffice or you could just go to your backyard for some family fun together. If you don’t have a lake you can swim in, you can still have water-based family fun. Just pull out the giant squirt guns or turn on the sprinkler and let the kids enjoy. We have a dozen squirt guns in our house that instantly entertain children ages 2 to 20. We have a rule that you can only shoot someone with a gun. We made the rule to keep grumpy moms from getting sprayed by kids, but it was actually a great strategy for older kids, because if you’re cornered you can always drop your squirt gun and it’s great to sneak up on other armed people. .
We hope you have a lake nearby and can enjoy your beach. Go swimming, float some rafts, or take out the kayaks or canoes. Here are some easy dinner recipes for your great lakeside grill dinner.
Be sure to review the water safety rules with children and make sure all swimmers are being watched by an adult.
Grilled chicken with avocado lime sauce
Quick, easy, and delicious.
For 4 people
Ingredients
1 1/2 lb chicken cutlets or chicken breasts, boneless and skinless, cut in half horizontally
2 tablespoons olive oil
Salt and pepper to taste
2 avocados, pitted and diced
2 tablespoons lime juice
1/2 cup red onion, diced 1/4-inch
3 tablespoons coriander
1/2 jalepeño pepper, seeded and minced (or to taste)
Instructions
Preheat the grill to medium high heat. Drizzle the chicken with olive oil on both sides and season generously with salt and pepper.
Prepare the sauce by combining the remaining ingredients.
Grill the breasts for 2 to 3 minutes per side or until cooked through. Serve topped with sauce.
Grilled Rosemary Beef
This easy weeknight meal is good enough for company, too. Enjoy!
Makes 8 servings
Ingredients
3 lb Eye of round or London Broil
Olive oil
1/4 cup balsamic vinegar
Salt and pepper
5 sprigs rosemary, clean and finely chopped
1 tablespoon flat-leaf parsley, minced
4 teaspoons garlic, minced
Instructions
Heat the grill. Cover the meat with the oil and vinegar; then sprinkle with salt and pepper. Finally add the rosemary. Cook the meat on the grill to the desired point.
Let the meat rest for a few minutes after removing it from the grill. Cut it into thin slices and drizzle with a little balsamic vinegar. Sprinkle with parsley and a little more rosemary, if desired.
Campfire Roasted Garlic Bread
Everyone loves warm, soft, and buttery garlic bread.
For 4 people
Ingredients
1 loaf of French bread
1/4 cup butter
2 teaspoons garlic powder
Instructions
Cut the bread in half horizontally, cover with butter and garlic powder. Replace the lid and wrap tightly in aluminum foil. Cook on the grill turning periodically until completely hot.
